To celebrate pancake day, PinkNews joined up with BakedByMia to make some pretty fabulous, rainbow pancake stacks.
Ingredients for pancakes:
230g or 1.5 cups Plain Flour
1 tablespoon Baking Powder
1 pinch of Sea Salt
1 tablespoon Caster Sugar
2 Large Eggs (beaten)
30g or 1/8 cup Butter + extra for frying
400ml or 14fl oz Milk
Gel food colouring (red, yellow, orange, green, blue, purple)
Method:
Before you begin, melt the butter. This can be done on the hob or in the microwave.
To make the batter:
Pour all the dry ingredients (flour, baking powder, salt and sugar) into a bowl.
Add in the eggs, melted butter and milk and whisk until it’s a smooth batter.
Divide the batter into 6 equal portions and add a small amount of colouring to each portion.
To cook:
Heat a saucepan over a medium flame and add a little butter. When it begins to sizzle you’re ready to start cooking.
Add a small amount of batter to the pan, you can use poaching rings like I did to get perfect circles or you can free-pour. The pancake is ready to be turned when the top of the pancakes begins to bubble!
Don’t worry if the tops look a funny colour, they’ll be perfect once you bite in.
